Ingredients:
- 1 pre-made pie crust
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 4 eggs
- 1 cup milk
- 1 cup shredded cheddar cheese

Directions:

Directions:
- Preheat the oven to 375°F.
- Place the pie crust in a 9-inch pie dish.
- In a skillet, cook the leeks over medium heat until softened, about 5 minutes.
- In a bowl, beat the eggs and heavy cream together.
- Stir in the crumbled bacon, cooked leeks, and shredded Gruyere cheese.
- Pour the mixture into the pie crust.
- Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
